Two of James Beard Award-winning chef Jason Wilson’s restaurants to reopen in October

Five months after temporarily closing its doors, Bellevue’s independent and locally driven restaurant, The Lakehouse, plans to reopen Oct. 12, with craft cocktail destination Civility & Unrest reopening Oct 14.

Owner Jason Wilson brings a new food team to these two projects, with Scott Emerick leading the kitchens and Tanya Emerick serving as pastry chef.

The restaurant and bar closed in April after a long battle to keep the doors open through the COVID global pandemic. After planning, calculating, and repositioning, Wilson and the Emericks are ready to invite guests into The Lakehouse.

They say to expect the same feel of a refined, relaxing retreat reminiscent of the previous Lakehouse, but evolving to a more casual dynamic of vibrant, locally farmed and seasonal, fresh-from-the-market craft cooking. The Emericks will also open with a new retail space within The Lakehouse. Cuisine du Marché will offer products supporting local artists including the finest kitchen staples, beautiful cards, artisan soaps, vintage tea towels, candles, adaptogens for the body, seasonal beauty and lifestyle products, and favorite French confections. Cuisine du Marché will also feature a carefully chosen and robust selection of unique, natural, and biodynamic boutique domestic and European wines.

Celebrating the seasons and sticking to the local bounty are top priorities for Scott Emerick, who brings a longstanding career and chef posts at Campagne, Le Pichet, Lark, Harvest Vine, and several Michelin-starred restaurants in France. He met his wife, Tanya, in France while she was on a business trip as Director of Sales & Marketing for Seattle’s Inn at the Market. Her pastry career started when she and Scott opened Crémant restaurant in 2007, which was named Bon Appetit 2007 Best New Restaurant. The two bring the pedigree, leadership, and creativity that Wilson sought. Wilson will remain the owner of The Lakehouse and Civility & Unrest and will continue as Executive Chef at The Lodge at St. Edward State Park.

Joe Dietrich will continue managing Civility & Unrest, where he has resided since the opening in 2017. He will introduce new ideas for the cocktail culture, including an industry workshop, working with Scott on food offerings, and celebrating new techniques and advancements in the cocktail world.

The Lakehouse and Civility & Unrest have also brought on an in-house wellness director who is prioritizing mental health initiatives. The program supports mental health and wellness for staff by promoting a balanced, safe, and sustainable work environment.

The Lakehouse will open Oct. 12 for dinner, a robust takeout program, and Cuisine du Marché offerings Tuesday – Saturday 4-10 p.m., and for weekend brunch beginning Oct. 17 at 10 a.m.

Civility & Unrest will open Oct 14, offering cocktails, liquors, and sparkling selections Wednesday – Saturday, 4 p.m., to close. The Lakehouse dinner menu will be offered until 10 p.m. followed by a late-night menu 10 p.m. to close.
